By Jo: The February meeting of Glossopdale’s WI welcomed Val Copestake to talk about vegetarian cookery.  Val has been a vegetarian for over forty years (a convert after meeting her future husband).

Her whole family are now vegetarian and enjoy sharing recipes and techniques.  But not strictly so.  One son can be led astray by the smell of frying bacon!

Val entertained the meeting with a selection of anecdotes.  She concluded by saying that over the last forty years the whole world of food has changed.  The number of cookery books available illustrate this.  Local greengrocers now sell a range of interesting vegetables and there are vegetarian options to be had in most restaurants.

The were lots of questions from a very interested audience of women who had tried or wanted to try vegetarian recipes including bread making.  Val had brought a selection of very tasty, “herby” bread which the meeting was glad to sample.  Val, a retired teacher has many interests, including patchworking.
